Broccoli Cheese Chicken Soup Gone Wild

  • 1/2 cup butter
  • 1/2 cup flour
  • 4 cups chicken broth
  • 1 can (12 oz) beer
  • 1 tsp pepper
  • 1 tsp dried thyme
  • 2 cups cooked wild rice
  • 1 bag (24 oz) frozen broccoli & three cheese sauce, prepared as directed on package
  • 2 cups cooked, cubed boneless skinless chicken thighs


  • In large saucepan, melt butter over medium heat. Add flour, pepper and thyme, stirring until bubbly; gradually stir in broth and beer. Bring to a boil. Stir in wild rice, prepared broccoli mixture and chicken; simmer 5 minutes.
