Broccoli Cheese Chicken Soup Gone Wild
- 1/2 cup butter
- 1/2 cup flour
- 4 cups chicken broth
- 1 can (12 oz) beer
- 1 tsp pepper
- 1 tsp dried thyme
- 2 cups cooked wild rice
- 1 bag (24 oz) frozen broccoli & three cheese sauce, prepared as directed on package
- 2 cups cooked, cubed boneless skinless chicken thighs
- In large saucepan, melt butter over medium heat. Add flour, pepper and thyme, stirring until bubbly; gradually stir in broth and beer. Bring to a boil. Stir in wild rice, prepared broccoli mixture and chicken; simmer 5 minutes.
