Wild Rice Cheese Chowder

Ingredients
- 4 tbsp butter
- 1/2 cup flour
- 2 cans (14.5 oz each) chicken broth
- 1/2 cup diced onion
- 1/2 green pepper, diced
- 1-1/2 cups frozen mixed vegetables
- 1/2 tsp ground white pepper
- 1/2 tsp Greek seasoning
- 2 cups shredded mild cheddar cheese
- 1 1/2-2 cups shredded Monterey Jack cheese
- 3 cups whole milk
- 1 cup beer or water
- 3 cups cooked wild rice
- fresh parsley, minced (optional garnish)
Instructions
- In large saucepan melt butter. Add flour, stirring until bubbly; gradually stir in broth. Add vegetables and seasonings; simmer 30 minutes. Gradually add cheeses; stirring constantly. Stir in milk, beer (or water) and wild rice; heat through - do not boil.
