Wild Rice Cheese Chowder

Ingredients
  

  • 4 tbsp butter
  • 1/2 cup flour
  • 2 cans (14.5 oz each) chicken broth
  • 1/2 cup diced onion
  • 1/2 green pepper, diced
  • 1-1/2 cups frozen mixed vegetables
  • 1/2 tsp ground white pepper
  • 1/2 tsp Greek seasoning
  • 2 cups shredded mild cheddar cheese
  • 1 1/2-2 cups shredded Monterey Jack cheese
  • 3 cups whole milk
  • 1 cup beer or water
  • 3 cups cooked wild rice
  • fresh parsley, minced (optional garnish)

Instructions
 

  • In large saucepan melt butter. Add flour, stirring until bubbly; gradually stir in broth. Add vegetables and seasonings; simmer 30 minutes. Gradually add cheeses; stirring constantly. Stir in milk, beer (or water) and wild rice; heat through - do not boil.
