Ingredients
  

  • 2 tbsp canola oil
  • 1 box (10 oz) frozen honey glazed carrots, thawed and drained
  • 1 tsp cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp tumeric
  • 1 cup chicken broth
  • 1/2 cup orange juice
  • 6 cups cooked wild rice
  • 1 cup dried, chopped apricots
  • 1/2 cup cilantro
  • 1/2 cup grated coconut
  • 1 tsp salt

Instructions
 

  • In large saucepan, heat oil. Add cinnamon, cloves, tumeric and carrots; saute 2 minutes. Add remaining ingredients; heat through.
