Wild Thai Stir Fry

  • 1/3 cup canola oil
  • 1 lb beef tenderloin, thinly sliced
  • 1 tbsp curry powder
  • 1 cup sliced onion
  • 1 red pepper, sliced
  • 1 cup fresh baby carrots
  • 1 can (14 oz) coconut milk
  • 3 tbsp chopped fresh basil
  • 4 cups cooked wild rice


  • In large skillet, heat oil; stir fry beef. Stir in curry powder. Stir in onions, peppers and carrots; cook 5 minutes or until vegetables are tender crisp. Stir in milk and basil; simmer 5 minutes. Serve over wild rice.
