Wild Vegetable Mornay

  • 1 bunch scallions, sliced
  • 4 oz fresh mushrooms, sliced
  • 2 tbsp minced fresh garlic
  • 2 tbsp butter
  • 2 tbsp flour
  • 1 cup half and half
  • 1 cup chicken broth
  • 2 cups shredded Swiss cheese
  • 1 box (9 oz) asparagus cuts, cook per package directions, drain
  • 2 tbsp white wine
  • 3 cups cooked wild rice
  • salt and fresh ground pepper to taste


  • In large skillet, saute scallions, mushrooms and garlic in butter until soft. Add flour; stir to blend. Whisk in half and half and broth; stir and cook until smooth (about 5 minutes). Stir in cheese, asparagus, wine, wild rice, salt and pepper; heat through. Adjust seasonings and serve immediately.
