Wild Vegetable Mornay

Ingredients
- 1 bunch scallions, sliced
- 4 oz fresh mushrooms, sliced
- 2 tbsp minced fresh garlic
- 2 tbsp butter
- 2 tbsp flour
- 1 cup half and half
- 1 cup chicken broth
- 2 cups shredded Swiss cheese
- 1 box (9 oz) asparagus cuts, cook per package directions, drain
- 2 tbsp white wine
- 3 cups cooked wild rice
- salt and fresh ground pepper to taste
Instructions
- In large skillet, saute scallions, mushrooms and garlic in butter until soft. Add flour; stir to blend. Whisk in half and half and broth; stir and cook until smooth (about 5 minutes). Stir in cheese, asparagus, wine, wild rice, salt and pepper; heat through. Adjust seasonings and serve immediately.
