Wild Zesty Side Dish

Ingredients
  

  • 1/2 cup chopped red onion
  • 4 tbsp pine nuts
  • 4 tbsp canola oil
  • 4 cups cooked wild rice (warm)
  • 1 fresh orange (grate zest and peel sections)
  • 1/2 red bell pepper cut into strips
  • 1 cup yellow raisins
  • 2 tbsp chopped fresh basil or 2 tsp dried basil
  • 1 pkg (9 oz) frozen peas, thawed
  • salt and pepper to taste

Instructions
 

  • In small skillet, saute onion and pine nuts in oil; place in large bowl. Stir in remaining ingredients.
