Wild Zesty Side Dish
- 1/2 cup chopped red onion
- 4 tbsp pine nuts
- 4 tbsp canola oil
- 4 cups cooked wild rice (warm)
- 1 fresh orange (grate zest and peel sections)
- 1/2 red bell pepper cut into strips
- 1 cup yellow raisins
- 2 tbsp chopped fresh basil or 2 tsp dried basil
- 1 pkg (9 oz) frozen peas, thawed
- salt and pepper to taste
- In small skillet, saute onion and pine nuts in oil; place in large bowl. Stir in remaining ingredients.
